One-Pan Chocolate Chunk Skillet Cookie & the Easy Bake Oven for Grown Ups

You may have seen my post earlier today about the attributes of one of my favorite things:  my Mighty Smart Oven.  A small oven that packs a big punch!  I thought you might like to see it in action rather than just a few pretty pictures.  It bakes beautifully and I'm going to prove it!

This recipe is ridiculously quick, easy and good!  So good, I ate the whole photo shoot at approximately 11:30am, with ice cream and, I am not so proud of that.

1  stick butter
1/2  cup brown sugar
1/2  cup granulated sugar
1  teaspoon vanilla
1  egg
1 1/2 cup flour
1/2  teaspoon baking soda
1/4  teaspoon salt
1  cup chocolate chips or chunks

350 degrees  -  20-25 minutes in an 8 inch skillet

Melt a stick of butter in cast iron skillet on med low heat.

Dump (deposit) the sugars and vanilla into melted butter and stir.

Stirred.

Add one whole egg and stir in completely with a fork.

Isn't this the greatest recipe?  No mixer, no giant bowls to wash...just one skillet!

Gently stir in flour, baking soda and salt.

The kids could come home from school and make this themselves, it's that easy!

Notice how the ingredients mix up so nicely with just a spoon.  Stir in chocolate!

Your husband could even make this for the family....oh nevermind.

Hello Beautiful!  Be sure to eat a spoonful or 3 before baking.

Next,  pop this crazy good dough into the easy bake oven, skillet and all.

Best of the Best!

One workhorse of an oven and, a super easy and GOOD chocolate chip cookie that won't mess up your kitchen and make you sorry you craved a warm, gooey chocolate chip cookie in the first place!

Teach your kids this recipe, it's a fun thing to do with their friends after-school.

Go forth and bake!

XOXO!
